Bacon and pork tenderloin are rolled into spirals and grilled. Slather with barbeque sauce - preferably a South Carolina mustard-based one. This is a perfect appetizer for a small family gathering.

Carolina Style Ribs

Mustard based sauces are definitively South Carolina. This one will definitely satisfy your needs. This is for the big fatty ribs, not the baby backs. Do not trim the fat from the ribs. This method renders out fat and keeps ribs moist. If you do not have a smoker available, this can also be done in the oven.

Famous in the Low Country of Georgia and South Carolina. This boil is done best on an outdoor cooker. It has sausage, shrimp, crab, potatoes and corn for an all-in-one pot all-you-can-eat buffet!

I've been using this recipe for over 20 years, ever since I moved to South Carolina. It can be adjusted to serve any number. Allow 2 tablespoons of seasoning per quart of water. If you cannot find hot smoked sausage, use another smoked sausage such as kielbasa and add crushed hot red pepper to the pot.

Bacon, peppers and mushrooms make a fine salsa. This is an awesome recipe I adapted from a Chilihead in East Texas; it's great if you like fresh salsa. This can be eaten with tortilla chips or as a soup!

Corn, sausage, potatoes and shrimp are boiled in a flavored broth, then served with spicy butter. Being a South Carolina girl at heart, this has and will always be one of my favorite and most comforting meals.
