Maria's Portuguese Bacalau

This is a traditional Portuguese dish that brings back memories of mom. It is not only tasty but it is always a hit at parties. Plan ahead, because the salted cod needs to soak for 24 hours.

Who Jansson is, we may never know, but this meal is an absolute must on a cold and frigid evening. The anchovies may seem an odd ingredient in what is basically potatoes au gratin, but when they combine with cream and onions, they'll tempt anyone!

This was my Mom's favorite seafood recipe, she is now 88, I am 60 and this is my all time favorite seafood recipe also. I have had guests, who, when invited to dinner, specifically request this to be served.

I made up this recipe because my hubby wanted to try a lasagna made with lobster meat. I combine tender steamed Maine lobster chunks in between pasta, jarred or homemade Alfredo Sauce and fresh spinach and ricotta, Cheddar and Parmesan cheeses. Serve with a tossed garden salad and oven toasted garlic bread.

'This tangy tuna bake is well received at potluck suppers,' relates Ellen Proctor of Great Barrington, Massachusetts. 'I've made it with light sour cream and reduced-fat mayonnaise with equally good results. At home, I serve it with a salad and rolls for a quick dinner.'

Lobster Casserole

This rich dish, consisting of succulent lobster meat sauteed in butter and seasoned with dry mustard; then baked in heavy cream, is a casserole native to Maine. If desired, you may add 1 to 2 tablespoons of sherry to the mixture. Top with buttered bread crumbs before baking for a nice presentation.

Shirley also shares this update of an old-time favorite--comforting tuna casserole. 'This may be the easiest tuna macaroni casserole ever,' she informs. 'I prepare it the night before, and then just pop in the microwave. There's no need to precook the macaroni, so there's really no fuss.'

Pasta is popular in our home, so my favorite meal would almost have to have it in the main course. In this delicious casserole, pasta complements the shrimp our local fishermen bring in.

New Brunswick Lobster Casserole

Submitted by: Judy Nic
This rich, creamy lobster casserole lets the lobster flavor shine through, it's great for buffets! Our lobster season starts May 1 in the Chaleur Bay region of New Brunswick, Canada. I know it seems a shame to put lobster meat in a casserole, but this is so delicious, and because we often buy 10-20 lbs of fresh lobster right from the fishermen, we often have some left over after we have our first feed.

This wonderful casserole was added to my recipe collection many years ago. The tuna and three-cheese blend wins over doubters who say they aren't fond of fish.--Virginia Ferris, Lyons, Michigan
