This is an Arabic vegetable stew made in layers and served with steamed rice or bulgur. My Damascene sister in law recently showed me how to make this. It is delicious. The addition of ghee or rendered butter at the end of the cooking is a traditional Damascene style of cooking; however, these days these dishes are made without the extra fat.

We think that parties and pita bread were made for this eggplant - based dip. Baked, peeled and cooled eggplants are mated with lemon juice, yogurt, tahini, olive oil ...and a few other ingredients. A stint in the frig and it 's ready to dip into.

Balsamic Roasted Vegetable Salad

This salad is a blend of roasted red onion, new potatoes, peppers, cherry tomatoes and baby spinach tossed in balsamic vinegar and sprinkled with toasted pine nuts. Lovely for summer barbecues.

This is a very simple, quick and more importantly authentic Indian side dish of grilled eggplant and tomato. Best served with naan or roti. It should have a consistency of, um, well, 'mush' when finished, but it's good. 

Charred Eggplant Raita

Whole eggplants are charred over an open flame to remove their skins, then mashed with yogurt and seasonings for this smoky side dish.

Eggplant is sliced into fries, then breaded and fried. This is a great side dish that I learned about while teaching English in China. It goes well as a side dish with seafood, burgers, barbecued meats or almost anything!

Eggplant, potatoes and tomatoes are simmered in a saucy curry. Substitute the cilantro with parsley, if desired.

I found that some of the best recipes are the easiest! Try this once, and more than likely you'll make it again and again. And another bonus: if you choose to use low-fat mayonnaise, you'll save the fat and calories that are absorbed when eggplant is fried.

This easy-to-prepare eggplant appetizer tastes great and can be made a little bit ahead of time. It goes especially well with roasted pork tenderloin and pasta. My girlfriend loved it--what more can I ask for?!!!!!!!
