INGREDIENTS
1 1/2 cups water
2 tablespoons lemon juice
1 1/2 pounds cod fillets
pepper to taste
1 small onion, finely chopped
2 large tomatoes, sliced
1/2 cup chopped green pepper
1/2 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese
1/2 teaspoon dried basil
1 tablespoon vegetable oil

DIRECTIONS
In a bowl, combine the water and lemon juice. Add fish; soak for 5 minutes. Drain and place fish in an 11-in. x 7-in. x 2-in. baking dish coated with nonstick cooking spray. Sprinkle with pepper. Layer with onion, tomatoes and green pepper. Combine the remaining ingredients; sprinkle over top. Bake, uncovered, at 375 degrees F for 20-30 minutes or until fish flakes easily with a fork.

Simply outstanding - easy, moist, delicious and healthy. Who could ask for more? Our only changes were a tiny sprinkling of Tony Chacheres for a bit of heat, and no green peppers. We loved it and will make again soon.

The cod was moist and done perfectly after about 25 minutes. However, the fish itself was quite bland, and the onions still had a very raw taste to them. Next time I would season the fish itself a bit more and would sautee the onions prior to topping the fish.

An excellent fish recipe! We are always on the lookout for tasty ways to serve baked fish, and this one is definitely a keeper. It has a wonderful combination of flavors.

I am giving this a 5 star rating because I made this for company, it was very easy came out very well and they ate every single bite of it and said it was nice. I didn't eat any because I do not like to eat fish. This made a very simple and very colorful dish to serve my company though I wish I would of taken a picture.
