4 (4 ounce) salmon fillets
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons canola oil
1/4 cup water
1/4 cup balsamic vinegar
4 1/2 teaspoons lemon juice
4 teaspoons brown sugar

DIRECTIONS
Sprinkle both sides of fillets with salt and pepper. In a large nonstick skillet, cook salmon in oil over medium heat for 10-15 minutes or until fish flakes easily with a fork, turning once. Remove and keep warm. Combine the water, vinegar, lemon juice and brown sugar; pour into skillet. Bring to a boil; cook until liquid is reduced to about 1/3 cup. Serve over salmon.

Nutritional Analysis: One serving (1 fillet with 2 tablespoons sauce) equals 257 calories, 15 g fat (3 g saturated fat), 67 mg cholesterol, 366 mg sodium, 7 g carbohydrate, trace fiber, 23 g protein. Diabetic Exchanges: 3 lean meat, 1 fat, 1/2 starch.

I loved this sauce over the salmon, which was on top of a bed of jasmine rice. Very flavorful. I used white wine instead of the water and a mixture of fresh orange juice & lemon juice. Adjust the amount of brown sugar you add into the sauce for a nice sweet & sour flavor. Very tasty.

I made grilled Salmon and used this sauce and it was so excellent!!! The Salmon I had actually was full of bones which would normally make me stop eating it, but the sauce was so good I finished the whole piece! Thanks for this great recipe!

I'm not usually a balsamic vinegar fan, but I was in a pinch for something to do with our salmon, and we had all the ingredients for this recipe. I really liked it a lot! I think the brown sugar really helped sweeten it up. I also made brown rice, and plain stir-fry veggies, so I didn't reduce the sauce as much, and used it to top all three. The whole family enjoyed it, and I will use it again!

Great recipe! I used my cast iron skillet and had no problems with sticking. We served it on a bed of organic brown rice and I used the little bit of reduction sauce to drizzle over some mixed field greens salad mix. Next time I would double the sauce recipe and maybe increase brown sugar by a tsp or 2, and then I would have enough for everyone to enjoy it as a dressing too. It would be a really delicious and pretty presentation served directly on the bed of greens as well!

An ok recipe - probably higher if I was a more patient cook. Be sure not to turn the fish more than once or it will fall apart. I was a little surprised at how much oil, etc. was left in the pan after I removed the cooked fish (1/2 cup?). I drained some of it before adding in the sauce. I also added a touch of cornstarch to thicken.

Really enjoyed this recipe. I think next time I'll bake or barbeque the salmon on a plank because I had a hard time frying it, but I really enjoyed the sauce and it added such a nice flavor. Using expensive balsamic also really makes a difference! Thanks for sharing.
