1/2 pound salmon
1 red potato, peeled and chopped
1 shallot, minced
1 egg, beaten
1/4 cup Italian seasoned bread crumbs
1 teaspoon dried Italian seasoning
salt and pepper to taste
1/2 cup cornflake crumbs
2 tablespoons olive oil

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C) and lightly grease a small baking dish.
Place salmon in the prepared baking dish, cover, and bake 20 minutes, or until easily flaked with a fork.
Place potato in a small saucepan with enough water to cover, and bring to a boil. Cook 15 minutes, or until tender. Drain and mash.
In a medium bowl, mix salmon, potato, shallot, egg, and bread crumbs. Season with Italian seasoning, salt, and pepper. Place the cornflake crumbs in a small bowl. Form the salmon mixture into 1 inch balls, and roll in the cornflakes to coat.
Heat olive oil in a medium saucepan over medium heat. Press the balls into patties, and fry 3 to 5 minutes per side, or until golden brown.

This is wonderful! Used italian bread crumbs in place of cornflakes. Both my 18 month old and 28 year old ate 'em up.

Very easy to make and so good! I found that I didn't need all the cornflake crumbs it called for. I made the burger mixture the day before and rolled them the following day. I used an ice cream scooper to get them consistent - the last patty may come out a bit small (or not at all). I didn't use olive oil but did spray my pan with Pam Olive Oil cooking spray. I served them on wheat buns with romaine lettuce and mayo that I doctored up with lemon juice and basil. A definite make again!

They weren't quite as quick to prepare as the recipe said but the extra time was well worth it. Next time I'll cruch the corn cakes a finer and have much more than the suggested amount on hand. All in all they were filling and delicious without being heavy- definetly one to make again.

Excellent! I made some changes to suit our tastes & my boyfriend - who loathes fish as though it were covered in plague - couldn't stop raving about them. Traded the potato for extra bread crumbs, added some Thai chilli sauce, garlic & finely chopped peppers. Put it on the BBQ & had a fantastic meal in less then 20 mins.

This is my favorite salmon patty recipe. Sometimes if I'm in a hurry, I will skip the potato and just throw in some dry instant mashed potato flakes. thanks for sharing your recipe!

These were awesome. I doubled the recipe since I had extra salmon. My friend came over for dinner with her 2 toddlers - they ALL loved it - and my friend initially said no thanks, I don't like fish. Quick and easy to make, too. I also skipped the corn flakes & just used breadcrumbs.

Really yummy. A great way to get rid of leftover salmon that also tastes great! I almost like it better than a regular salmon filet.

wow! made these tonight with kids, were fantastic! fussy eater son, who has never eaten fish, ate his and rest of his sisters!! were delisious, also, great for getting the kids cooking.. thanx!

These were delicious. I substituted flounder for the salmon and bread crumbs for the corn flakes because it was what I had on hand. The patties had good texture and flavor, although I'll use Old Bay seasoning next time instead of Italian seasoning. It's a sneaky way to get kids to eat fish.

These are really good and versatile. You can have them with vegetable and other side dishes or you can eat them with eggs and biscuits or something-that's what we did tonight! I
