Quick and Easy Shrimp Fajitas

"This is a twist on a classic recipe using shrimp instead of beef or chicken. I use regular old taco seasoning to make it easier, but any seasoning combination for fajitas will work. Serve with refried beans and Spanish rice to make an easy meal!"

1 1/2 tablespoons vegetable oil, divided
1 green bell pepper, sliced
1 red bell pepper, sliced
1 pound medium shrimp - peeled and deveined
1 cup (1 small) chopped onion
1 (1.25 ounce) package taco seasoning mix
3 tablespoons water, or as needed
6 (10 inch) flour tortillas, warmed

DIRECTIONS
Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the red and green bell peppers, and onion. Cook, stirring frequently until peppers are hot, but still slightly crisp, about 5 minutes. Remove from the skillet and set aside.
Pour the remaining 1/2 tablespoon of oil into the skillet, and add the shrimp. Cook, stirring occasionally, until pink and opaque. Reduce heat to low, and return the peppers and onion to the skillet. Stir in taco seasoning and water so that everything is evenly coated. Simmer until peppers are heated. Serve in warm tortillas.

Hey, what do you know...the WHOLE family found something they liked. It was easy to make and very quick. I used McCormick's Fajita seasoning packet.

This was really good and really easy, and that makes it a winner in my book. I mixed my raw shrimp with about 1/4 cup of cilantro and the juice of 1 lime and let it marinate while I cut and cooked the vegetables. Then prepared it exactly as directed. I served it with whole wheat tortillas, spanish rice and chips and salsa. Hy hubby loved it! Definitely one to make again.

This is a tasty recipe. I will use less taco seasoning next time and will reduce the amount in half. I will also use a seaoning mix that is mild as the medium was too spicy for hubby.

This was sooo good. I did add some garlic. I think that next time I will use the smaller shrimp and not as many vegies in the mix. The whole family loved this.

They were okay. Would not make them again. Not enough flavor in the sauce. Shrimp should definitely be marinated first.

Good basic recipe. I added 1 tsp. cumin and 1/4 tsp ground coriander (this spice goes really well with spicy seafood in my mind). Also, I threw in the zest of one lime and then the lime's juice to make it a little zestier. Loved it with guacamole.

I thought this was a quick, easy meal. I marinated my shrimp in lime juice and zest and didn't use the whole faijita seasioning packet. I might use individual seasonings next time rather than the packet.
