The trick to the wonderful taste and consistency of these potatoes is not the ingredients, potatoes, butter and milk, but the way they 're mashed- with an electric mixer.

Cooking in foil packets makes for a tidy grill, and allows all the flavors to mingle and intensify. Here, thick slices of potato and onion are seasoned and cooked with butter until tender and brimming with flavor.

If you are fond of Cheddar, than you'll love this recipe. Besides potatoes there 's lots of cheese - even a can of Cheddar cheese soup, which is layered with the potatoes to make this thick and very wonderful scalloped dish. Makes four generous servings.

A warm and cozy comfort food that goes great with anything, fancy or plain. Use whatever type of condensed cream soup you like. I normally use broccoli, mushroom, or chicken depending on the accompanying entree. Use any milk, but not cream or half and half.
