Squash Dip

If you like goat cheese and butternut squash, you'll love this dip! I served with sliced baguette and substituted roasted pine nuts for the walnuts. Also added a little bit of salt. For a more mild flavor, you could substitute cream cheese for 1/2 of the goat cheese. Very beautiful appetizer. Lots of great comments!

Swiss Chard with Pinto Beans and Goat Cheese

Absolutely DELICIOUS!!! One of my new favorites! I used black beans instead of pinto and did up the Red Pepper flakes to make it a little more zippy. Served over whole wheat pasta. Yum!

Dairy Free Chocolate Pudding

I REALLY enjoyed this pudding recipe and it was so simple! And vegan! I did increase the sugar to 1/3 cup and also added an 1/8 tsp of orange extract which gave the pudding a wonderful 'chocolate orange' flavor. Yum!
