Oregon

Oregon lies at the heart of the Pacific Northwest. The Beaver State has a long coastline along the Pacific Ocean; the Columbia River forms three-quarters of Oregon’s northern border with Washington, and California and Nevada border Oregon to the south. In November, 1805, Lewis and Clark reached the Pacific Ocean, having followed the Columbia River to where it empties into the ocean near modern-day Astoria, Oregon. Upon seeing the Pacific, Clark wrote in his journal, “O! The Joy!” For certain, Oregon has physical beauty to spare, from the coastal shores to the towering Cascade Range to the pastel desert of Hell’s Canyon in the Northeast. The Beaver State is also a bountiful place, with crab, salmon, fresh fruit (berries, pears, plums, and cherries), local wines, hazelnuts, and foraged mushrooms making up the short list of important foods. For Oregonians, eating local is easy…and delicious. It’s no surprise that Portland, Oregon, is a major force in advancing West Coast cuisine, with its emphasis on fresh, local, organic, and sustainable foods.

About me: I'm a victim of a pardigm shift. In my generation, the ladies don't care to know how to cook. That's cool though, cuz I like learning new things. ;)

Cookie Balls

Reviewed on Nov. 18, 2008 by pomplemousse
Very easy and very good. I used chocolate for the coating since I didn't have candy coating. They still were good. I had to do a few batches of crushed cookies and cream cheese in the food processor bc mine is small, but it worked well enough. I used my small cookie scoop to make the balls and froze the trays for about an hour. They set up perfectly and were relatively easy to cover in chocolate, although I'll admit that is not my expertise. Thanks for the recipe.

Turkey Lo Mein

Reviewed on Nov. 18, 2008 by TysMom
This recipe was great! I threw the ingredients "ground turkey" and "ramen" into the recipe search and couldn't believe a recipe came up...and to top it off, it was de-lish! I made a couple adjustments just based on what I had on hand. 1) Instead of using the veggies suggested, I microwaved and threw in one package of "Steamers" Asian Medley with an Orange sauce. It really added a great flavor, just a hint of orange...it was nice. 2) I also took the suggestion of others and used minced garlic and less of the ramen packaged seasoning. It was still pretty salty, but super yummy too! Even my son ate it...which is really just a miracle! This recipe will stay in the recipe box for later use...often use! :-)

Chipotle Shrimp Tacos

Reviewed on Nov. 18, 2008 by KymInNM
This was so flavorful and easy. I omitted the bacon; instead I used a dried chipotle in addition to the adobo peppers, which added a delicious smoky flavor and just the right amount of spice. I also doubled the (red) onion and caramelized it—next time, I’ll use a little more. To the taco, I added shredded red cabbage mixed with a honey/lime/cumin dressing, and it was a perfect complement. Next time, I’ll add fresh guac.
