Easy Taco Casserole

This is an easy, fast casserole perfect for a weeknight family meal. I did use a package of taco seasoning and 1/4c water instead of the mayo/chili combo and it came out just perfect. Thanks for sharing

Garlic Chicken

If you're a working wife and mother, then this recipe is a fast week day meal that you'll love for it's versatility. It's so simple, I warmed the oil and garlic in the microwave, ran the shredded parm cheese that I had thru the food processor so that it had more of a crumb like texture which made it mix w/ the breadcrumbs beautifully. I dipped and coated the chicken as instructed in the recipe and baked on a parchment lined cookie sheet for about 20 minutes for 5 small boneless skinless breasts and dinner was done. I served with sauted shallots and peas which I prepared while the chicken was baking. I can't wait to try this again, but I'm going to turn this quick and easy meal into parmesan chicken. I'm also going to try pounding the chicken breasts thin and then when done serve to the kiddos as chicken strips. This is going into our regular menu rotation. Thanks so much for sharing.

Garden Fresh Tomato Soup

This was a very fresh tasting tomato soup. I used romas as that is what I had on hand. I boiled them for a few minutes so as to remove the skin before using them in the soup, and then followed the recipe after that. I also didn't have cloves, so substituted garlic (which we love) I served w/ a dollop of sour cream and shredded cheese topping and a parmesan topped crostini for a dipper side. Will definitely make again perhaps adding a touch of cream to make it a little thicker.
