The 50th and final state admitted into the Union, Hawaii is a series of islands in the middle of the Pacific Ocean. It is the furthest south of any U.S. state, further south than the Florida Keys, on roughly the same latitude as Cuba. The first human arrivals to the islands appeared more than 1,000 years ago, having island hopped from Indonesia and Southeast Asia. Polynesians brought pigs and chickens. In the 18th Century, Captain Cook brought cows, goats, and horses. Edible plants like taro, sweet potato, coconut, pineapples, and sugarcane were all brought to the islands to be cultivated in the rich volcanic soils. Today, Hawaii is known for growing coffee, macadamia nuts (originally from Australia), sweet Maui onions, pineapples, Ahi tuna, and sugar cane. But perhaps Hawaii is best known for the luau, a traditional feast that centers on the roasted pig, which is buried in the ground and cooked slowly over white-hot stones.

Fish Chowder

I made this with mahi mahi and added a can of chopped clams. I came up short on the clam juice so I made up the volume with fat free half and half, and used just 1 can of milk. Definitely add lots more Old Bay...will make again, was a big hit with friends!

Banana Crumb Muffins

These muffins were the best! I followed the recipe exactly but I did add in a quarter cup of walnuts. It was delicious and the crumb topping makes these irrasistible! Great for using up leftover mushy bananas.

Blueberry Pie

I was pretty disappointed with the outcome of this pie after all the great reviews. Even with extra cornstarch (5T) and extra sugar (1c) recommended by other reviewers, the pie turned out like soup and not very sweet. I even battled my temptations and waited overnight to cut it. I had also lowered the heat to 400 as many before me recommended and wrapped the edges in foil, but the crust was still done very early. The leftovers are still tasty for me at home, but a total mess to serve to guests... I think next time I'll try one of the recipes that uses gelatin instead of cornstarch.. or just make blueberry shortcake..
