Roasted Chicken and Potatoes

Reviewed: Nov. 17, 2008
Very Juicy and delicious,BEFORE I put the chicken overnight in a brine recipe that I actually found on this website! I added carrots and mushrooms to the bottom of the pan along with more juices. I also found a great spice called chief essence and it was delicious!! Yummy!

Chiles Rellenos Pie

Reviewed: Nov. 11, 2008
This recipe was delicious, My husband and I had friends over and they ate two whole casseroles!! I also boiled two chicken breast with 2 garlic cloves, half an onion, oregano, and some lawry's salt, chopped it up and ladled some chicken broth over it. Also I made one without chicken and my vegetarian friend loved it, I just added more cheese. Instead of jarred salsa I used homemade salsa and topped it with sour cream it was yumm!!

This recipe is awesome!!! The only thing I would do different is cook the potatoes longer to mash them easier, add worchester sauce, more water, and some gravy for some juicy meat!! other wise this was awesome!!!!

I made these and my family went crazy (including my terribly picky son). I omitted the walnuts and added some cinnamon instead. Great!

Butter Fried Zucchini

Reviewed: May 4, 2008
This is one of our family's favorite "appetizers". It's definitely a southern thing, even though we live in California (family from Texas and North Carolina though). This is basically the same recipe that I grew up with, except that we just dip the zucchini in milk, not eggs, and then dip in the flour, sprinkle with salt and fry em up! These never, ever make it to the table because we eat them to fast :)

Grandma Johnson's Scones

Reviewed: Apr. 12, 2008
I wanted to make my dad a batch of scones for his birthday. I didn't have a lot of time to research a recipe and just assumed that since this recipe had 800+ 5 star reviews, I could trust it. Not only was it a fabulous recipe, but it was so.... easy. I doubled the recipe and made one regular batch and one cranberry-orange batch. I just added some orange zest and about a cup of craisins. Fabulous!! This recipe is going into the family file right now!!!

Creamy Split Pea Soup

Reviewed: Jan. 4, 2008
This recipe is a 5+ star recipe. My brother got the recipe here from allrecipes.com and gave it to me. I love this soup, highly addictive. I made changes to the recipe, but only for personal preference. I omitted the diced ham as I do not like ham and omitted the heavy whipping cream to keep the recipe Weight Watcher friendly. I did leave in the bacon, just reducing it to 3 slices for the flavor.

Smothered Green Beans

Reviewed: Nov. 19, 2007
I make this same recipe except with some minor yet important modifications. I drain the bacon fat completely, even whipe the pan. I then coat the pan with some olive oil and about a tablespoon of butter I then add the garlic and onions, let them cooked for about three minutes and then turn up the heat a little more and sear the green beans more or less tossing them in the pan I then sprinkle some red pepper flakes the chopped bacon right before I turn off the pan, keeping a good bite consistency to the green beans. Delicious!
