Connie's Zucchini 'Crab' Cakes

These were just OK but hardly a substitute for crab cakes. I think they'd taste better if you just expect them to taste like what they are... zucchini cakes!

Jalapeno Popper Spread

I wanted to serve this as a cold dip because it's too hot up here to turn on the oven. But because I didn't bake it, I think that prevented the jalapeno flavor from getting into all that cream cheese. I also used sour cream in place of the mayo. To make it give it more flavor I added 1/4 c. jalapeno juice from the jar and twice as much jalapeno and left out the cheese. Before I made the adjustments no one was interested, but after I mixed it up the spread/dip was thinner & easier to eat with corn chips and people seemed to eat a lot more of it.

Orzo with Parmesan and Basil

Eew, not good :( I love to cook, read my othe reviews, I'm pretty easy to please, but my mouth did not agree with this one. It was oily and I didn't like the texture after I added the cheese, it seemed like it either needed a lot more, or I shouldn't have added it to begin with. And definitely not worth the $1.99 for the fresh bunch of basil!
