Simple Cauliflower Soup

Mmm mmmm good! I pureed everything and added cheddar cheese at the end. Looked long and hard before settling on this recipe, and am glad I did because it turned out great!

Pizza Casserole

Great base recipe. Easy to adapt to our favorite pizza toppings. I used four cheese pasta sauce for pizza sauce (what I had)-worked well. Omitted the green peppers. Like others I put half of the filling in the casserole and topped with cheese then the rest of the filling and continued as the recipe directs. Next time I plan on adding mushrooms and olives,& use penne for the noodles. Thanks for the tasty recipe, perfect pot luck option too!

Black Bean and Corn Quesadillas

This was a solidly good recipe and I was pleasently surprised by how well the brown sugar worked with the salsa and the rest of the ingredients. Next time i think i'll try it with barbecue sauce; definitely a keeper.

Unbelievably Easy and Delicious Vegetarian Chili

Absolutely fantastic recipe! I accidentally bought soy taco filling instead of regular soy ground beef so I just omitted the taco seasoning. It tasted amazing even with the revision and only took about 10 minuets start to finish.

Simple Country Ribs

Great simple recipe! It tastes like you've been cooking 'em all day. I've made it a few times now with rave reviews every time. The only thing I do different is add a large bottle of Newcastle Brown Ale. Oh and make sure you use good-quality BBQ sauce - no cheap stuff!

Banana Crumb Muffins

Excellent! These really puffed up just like bakery/store muffins. I substituted lightly mashed apricots for the banana, and added walnuts. These we're great but I do plan on further experimentation with this recipe. The crumb topping is a nice touch, but not necessary. Especially with chunks of fresh fruit.

Whole Wheat and Honey Pizza Dough

So it tasted okay, the flavor was there. But the texture was poor. I made a sponge with the yeast, added it to the flour mixture (half whole-wheat, half bread flour), with the honey and salt. Hand kneaded for 15mins until gluten developed. It rose perfectly and doubled in 1.5hrs. I tossed to stretch and placed it in the pan. It stretched perfectly, nice and thin, great gluten strands. It rose again for 45mins, then I topped and placed it in the oven. Once baked no more rising occurred, dough was slightly dense and chewy. I will try a different recipe next time.

Oatmeal Peanut Butter Cookies III

I used half Whole Wheat Flour/ Half All-purpose, Whole multi-grain oatmeal, organic currants, and that organic peanut butter that you grind yourself at the store. These turned out fantastic, thanks for the fabulous recipe!

Corn and Avocado Salsa

Make sure to add alot of the other vegetables besides corn to balance out its flavor. Think two avocados two bell peppers and 1/4 cup cilantro.
