This soup is made with corn tortilla thickened chicken broth, cans of red and green enchilada sauce, cooked cubes of chicken and half-and-half. Garnish with grated cheese, tomato, jalapenos and serve with tortilla chips.

Tired of ordinary old apple pie? Well this fabulous recipe adds a delicious twist to the apply classic. Sliced, unadorned apples are mounded into a pie crust and topped with a lattice crust. Then, just before baking, a sweet, thick sugar syrup is poured carefully onto the crust. An hour later, the apples are tender and fragrant and the crust a glistening brown.

There is nothing to beat a fresh blueberry pie. It doesn 't need much: sugar, a bit of cornstarch to thicken all the nice juices and cinnamon. It 's perfect with fresh berries, but still mighty fine with frozen ones.

This is the prettiest strawberry pie. Choose berries that are large and of similar shape. Stand them up in a pre-baked pie crust and pour a strawberry gelatin glaze evenly over the top. Chill until set and serve with a bowl of freshly whipped cream. 

Shepherd's Pie I

Saute ground beef, chopped onion and crushed tomatoes together, until the meat is browned and the juices are absorbed. Pile the mixture into a casserole dish, and top it with mashed potatoes and grated Cheddar cheese. Ten minutes in a hot oven melts the cheese and warms the potatoes.
