Portobello Mushroom Stroganoff

I love this recipe! I added more mushrooms and added a little bit of garlic salt and it was awesome. Great Recipe for a vegetarain.

Pueblo Green Chile Stew

WOW!!! Ok, I will admit that each time I go out to a Mexican restaurant I usually will order the chile verde - and this reciep tastes just like it! Delicious! I added one yellow onion and three garlic cloves and sauteed them with the pork before adding the rest of the ingredients. I also used one can of tomatillo salsa because I did not have all the cans of chiles. I served it with sour cream and torillas...we definetely will be making this again!

Catherine's Spicy Chicken Soup

I was absolutely impressed by the flavor of this soup!! Totally easy to make...I boiled the chicken according to the directions and satueed it with the onions and garlic. I omitted the whole tomatoes and one tsp. of chili powder and it was still plenty spicy! I was afraid that it was going to be too salty and then I added the sour cream, which completely cut the saltiness. Great recipe!

Hungarian Mushroom Soup

A very good soup recipe! I had to add some garlic salt to give it a little moe flavor, but other than that I followed the recipe exactly. I will start to include this one in the regular soup rotation!

Black Bean, Corn and Turkey Chili

This was spectacular and SUPER easy. My wife is vegetarian, and so instead of turkey, I used Morningstar crumbles. Couldn't tell a difference (well, kinda; ground turkey still would have been better) ;-) But, otherwise, didn't change a thing. It was wonderful. My one year old loved it, too. WIll make it again in a heartbeat!!

Russian Mushroom and Potato Soup

This soup was hearty and delicious! Plus it was super easy to make. I didn't have 2 leeks, so I used one and substituted a yellow onion. I also had to add a little extra salt (garlic) for my husband, but we both loved it!

Herbed Potato Soup

Delicious! Perfect for cold fall nights. I didn't have any thyme on hand so I substituted sage and I also added about a tsp. of cornstarch at the end to thicken it up. Will definetely be making this one again!

Rossi's Sausage Gnocchi

The gnocchi in this one kind of killed it for me - the sausage is enough by itself and the gnocchi kind of overpowers the dish. I think if I make this again I will substitute penne for the gnocchi.

Sean's Falafel and Cucumber Sauce

Falafel, not so much. Tzatziki sauce, very good. So, we tried to make the falafel, and it just didn't work. Even though a small part of it not working was us doing it on the George Foreman Grill (as one reviewer suggested) to cook, the taste was what killed it. It wasn't horrible, but it tasted more like a fake Stove Top Stuffing than it did actual falafel. Wasn't our cup of tea. However, we did make the Tzatziki sauce, and it was wonderful. I will use the abundance of leftovers (we made more than just a 6 oz cup of yogurt) with Gyros tomorrow.

Chicken Enchilada Soup I

This was pretty good. The enchilada sauce gives it a very different snokey chili flavor. I used fresh chicken broth that I freeze when I boil my chicken to shread the meat. I also used my fresh frozen shredded chicken. I added lots of fresh cilantro because we love it. My favorite to all tortilla soups are adding half a lime squeezed and dropped in. I still have my favorite tortilla soups, but this one was pretty good. Thanks for the recipe!

Zucchini Herb Casserole

I like this recipe a lot, but my family was not a fan. I doubled the tomatoes, added an entire yellow onion, tripled the spices and garlic and reduced the cheese by half. My family complained that it was bland, but I thgouht it was pretty good, especially for such a healthy dish! Next time I think I will add mushrooms and maybe some eggplant as well.

Killer Artichokes

This was great and easy. I made it for my visiting family who come in from artichoke country of Monterey California area. They enjoyed the Texas mesquite smoke flavor from our grill. (We use only wood, not gas) I added half an onion to the boiling water, and 1/2 stick real butter with a squirt of lemon and sea salt. I trimmed the sides and top and it had a great presentation as well. I served with lemon cilantro butter and cilantro mayo but they enjoyed then as they were. I will definatley do this again when entertaining. Thanks for the great recipe.

Corn and Black Bean Salad

This was an ok recipe, not bad at all. I prefere different versions of the Black Bean Salads. I had four guests to dinner and not much was said and not much of it ate. I think it was the balsalmic vinegar, atleast for me, I didnt favor it much with the mixture. I would eat it again, but I prefere a more Texas version of this. Thanks for the recipe though.
