Last Minute Mushrooms

Reviewed: Nov. 14, 2008
This recipe would be good, if you remember a couple of things in cooking with mushrooms. Fresh mushrooms should be cooked at more than a medium heat or else they just steam. As for the seasoned salt, mushrooms should only be lightly seasoned AT THE END of cooking after the juices have evaporated. Adding just a dash of nutmeg can make this an outstanding dish.

Simple Scones

Reviewed: Oct. 28, 2008
These are insanely delicious!! This was the first time I've made scones and they taste better than the ones at Starbucks! I added 2 palmfuls of dried cranberries and the zest of 1/2 a lemon.

Baingan Bharta (Eggplant Curry)

Reviewed: Oct. 26, 2008
Delicious! This was my first attempt at Indian and it turned out wonderfully. Like many other viewers I used fresh ginger & garlic in place of the paste. Also used canned tomatoes and saved the liquid for the simmering. Loved it!

Iced Pumpkin Cookies

Reviewed: Oct. 23, 2008
Fabulous recipe! The icing came out too thick for me to drizzle, so I added in a bit more vanilla & milk. This made it more of a drizzle consistency & not as overpoweringly sweet. I've never been good at drizzling with a fork, so after mixing the icing, I poured it into a 2-cup Pyrex measuring cup so I could use the spout to drizzle. I can't wait to take these to work!

Pretty good, not that great as written. I won't make this one again, I'll have to keep looking for a better recipe.

Baklava

Divine! I used a combo of walnuts and pecans and accidentally layered 2x as much phylo between the layers of nuts and it still came out great! Not as tricky as I thought it would be either!

Quick and Easy Vegetable Curry

Reviewed: Oct. 3, 2008
I took the suggestion of another review and added the can of Coconut milk and only about 1 and 1/2 cups of chicken broth. It took on a creamy consistency that was so fragrant and tasted amazing! I didn't think it need much more in spice after the curry powder (on our travels a few years ago I had a Turkish Curry I picked up at a local market and I think it was already a little spicier than a normal curry). I also used all fresh veggies in this order: 1 lg. carrot and 1/4 a head of Cauliflower, 2 fresh tomatoes and some chicken I had already cooked before hand. Those were added to the onion/garlic/curry tomato paste, broth and milk concoction. Let those simmer for about 20-25 min. Then I added nice large chunks of Zucchini, Mushrooms and the bell pepper and let those simmer for 15 min. or more (test to make sure they are not overdone along the way). I will try next time to top it off with the cilantro but didn't have any. I definately recommend something for a crunch . . .cashews were another suggestion I took. The salty sweet and spicy was perfect combo. I will be hanging on to this to make again and again.
