About me:
I grew up loving to cook for my family. That desire is still there today for my kids and grandchild. And, when there is a potluck, I usually go through and find a new recipe to try out on everyone. As I have gotten older, I have come to realize how important healthy eating is. I enjoy cooking healthy recipes and then later telling my family they just ate a healthy low calorie meal! It is a challenge, of sorts, to show them that eating healthy can taste great! I have used this web site for years and have loved the recipes and ideas I have discovered. I'm not sure why I just now decided to become a member. Should have done it long ago!

Chicken Tortilla Soup IV

This was really good, but I did make a few adjustments, which is why I rated it a 4 star instead of 5. I sauted onion and bell pepper then added rest of ingredients. Also, I didn't have any salsa so I added a can of rotel. I sometimes add an additional can of petit diced tomatoes. I usually double the spices to 1 tsp. I do not fry the corn tortillas...we just use baked tortilla chips and top w/low-fat cheese and sometimes a dollop of light sour cream. My family loves it.

Chicken and Bacon Shish Kabobs

My family really liked this one. Added a red bell pepper to the marinade along with mushrooms and some cherry tomatoes. Really good!

Sirloin Tips and Mushrooms

This recipe was not a "got to have" one, but it was a nice variety to use up some meat we had in the freezer that needed to be used up. I followed advice, such as adding a TBSP of minced garlic, 1/2 a can of milk (can is from the cream of mushroom soup), and I put some condenced beef broth and pepper. My husband does not like onions, so I used some dried chopped onions to the mixture and fresh sliced mushrooms. Came out pretty good. This is a great recipe to use up meat that has been in the freezer too long.
