Colorado

Colorado became a state in 1876, one-hundred years after the signing of the Declaration of Independence, thus earning it the nickname the Centennial State. The name Colorado comes from the Rio Colorado, which in Spanish means, “the red-colored river.” Colorado exists on the boundary between the Southwest, the Mountain States, and the Central Plains. It is the home of the Great Rocky Mountains, but Colorado also marks the spot where the magnificent peaks flatten out into the wide-open rangelands of the Great Plains. What was once bison country is now big beef country. Historically, the stews, roasts, and one-pot dishes that grew up on the plains of Colorado made use of wild game and freshwater fish, reflecting the diet of early prospectors, explorers, and Native Americans. Today, there is also a considerable and well-established organic food industry in Colorado; and on the Western Slope of the Rockies, an impressive wine industry has emerged.

About me:
My dad is a big influence. Not so much for what he cooks (mainly unhealthy mexican food) but for the way he cooks. He taught me early on that cooking from fresh ingredients was an important part of cooking. We very seldom ate out or from packaged mixes. Before decent tortillas were sold in stores, my dad would make them fresh everyday. I grew up watching him cook every day and admired how fast he could chop and guide a spoon of dough across a corn husk for tamales. I also used to watch Julia Child on public television when I was a little girl. She really enjoyed cooking and seemed so skilled and fearless in the kitchen no matter what she was making! I also have a next door neighbor who cooked a lot of interesting traditional American food. She has a whole bookshelf in her kitchen fulll of well-worn cookbooks. Oh how I longed for a battered Joy of Cooking like she had or the money to go to new restaurants and try exotic foods like she did with her husband! I'm frugal

Sausage Crescent Rolls

I made these last night, but substituted ground beef seasoned with burrito seasoning. (I'm not a big Italian Sausage fan) It turned out great. Will definetly make again!! Thanks for the recipe!!!

This wasn't bad, it just wasn't the best. The 'noodles' were too soft, and made the mixture a little to thick for my taste
