Western USA

The American West is big country. It takes in the vast high plains, the rugged mountain states, the arid Southwest, and the verdant Pacific Northwest. The cuisine that has grown up here reflects this diversity. It can be as simple as a buffalo burger tossed on an open flame or as well-heeled as a wine dinner served in a fancy San Francisco restaurant. There’s spicy Southwest cuisine from Arizona and New Mexico and delicate Asian-inspired cuisine along the coastal stretches of California, Oregon, and Washington. And let’s not forget that here in the West the wild salmon makes its last stand. Yes, there’s much to the claim that the West is best.

I turned this into a vegetarian dish by using Morning Star "sausage" links and it turned out great!

Spinach Cheese Manicotti

Reviewed on Aug. 29, 2008 by Nici
Yes, this was very good. I precooked the manicotti, and skipped the water in the sauce. Also sauteed the onions with crushed garlic before adding. I followed a tip from another reviewer to put the filling into a large ziploc bag, cut off a corner, and use it to squeeze the filling into the noodles. It worked great- but only cut a bit of the corner of the bag off. To much, and the filling just plops out!

Chicken Tortilla Soup V

Reviewed on Aug. 28, 2008 by CollegeCook
OMG. That was so good. I was surprised at how easy it was too. I was practically licking my bowl clean. I stir fryed the onions and fresh garlic to release their flavors before adding to the boiled soup. Garnished with avocado and Lime-flavored Tostitos==Absolute heaven. And still healthy, low fat. Just vegetables and tomato broth basically. It even tastes good without the chicken to make a stricter diet. Also took a big tortilla, did a quick deep fry and placed it at the bottome of the soup bowl before ladling the soup over it. Very pretty
