Grilled Salmon I

Very simple and easy to follow recipe. I combined all the ingredients in the freezer bag and baked them in foil pouches, clean up was heaven!!

Rabbit Fricassee Cuban-Style

Great recipe. I seared the rabbit meat with the spices before adding the water to boil. It makes the meat hold up better. Delicious! Workes great with any white meat poultry, too. Gracias!

Best Chocolate Chip Cookies

This recipe has officially become my go-to choc. chip cookie recipe! Seriously. I added 1/2 tsp of cream of tartar as one reviewer suggested and instead of using semi-sweet chocolate chips and nuts I used 1 1/2 cups of BOTH bittersweet and white chocolate chips. Perfect! Big, moist on the outside, crunchy on the outside, delicious cookies. So much better than what's on the back of the bag! Give these a try!

Angel Chicken Pasta

What a great new addition to my chicken recipes! I added sauteed garlic and fresh spinach. I also doubled the sauce but I used light cream cheese and only 1/4 c. butter, just to make it a little bit lighter. I seared the chicken breasts in a frying pan before baking. Thanks to the reviewers for all their tips to make this recipe truly outstanding.

Cowboy Oatmeal Cookies

Sadly, I consider myself a chocolate chip snob...I've never gravitated toward a chocolate chip cookie I haven't liked...I came across this recipe and it just sounded good... so I "cowboy'd up" (*groan*) and gave it a shot.... I was nervous the whole time... until I tasted the dough (I know, I know)...and at that point, knew that I had a winner. These were awesome... they were chewy... they were crunchy... they were light...and the butterscotch chips a pleasant change. The only thing is that the first batch got stuck to my cookie sheet... so I had to stop and scrub that off... but then I broke out the parchment... and from then on, it was smooth sailing. This is a keeper! Thank you for this wonderful cookie!!

Currant Jelly Wiener Sauce

(I am a STRICT vegetarian so I am just going by my co-workers reactions) I made these as directed and had mixed reactions. The general consensus was "they are ok" some people thought they were "pretty good". My feelings were kind of hurt because I usually get rave reviews for everything I make, which in all fairness is usually dessert. I will try to make this again for a different crowd and get back with you guys on the reviews:)

Spinach and Tortellini Salad

pretty good. I followed the directions pretty closely. I used Ken's steakhouse light italian dressing.. just a splash. As per other reviewers, I used fresh spinach. I used grape tomatoes, which got unappetizingly squishy after a few hours.. Next time they will be a last minute addition. I used a 16oz bag of 3 cheese tortellini cooked for 7 minutes. A handful of reduced fat feta topped it off nicely. will make again!

Spicy Grilled Cheese Sandwich

I make a sandwich like this except with provolone cheese and red onion, no tomatoes (I don't like them) and I added banana peppers. Great recipe though!

Fried Onion Rings

This made awesome fried onion rings, squash, and okra! We used carbonate water and added a few spices but basically stuck straight by the recipe. Definitely a must-have for the recipe box! Thank you for this one!!!

Beefy Barbecue Macaroni

This was pretty good. I think it would've been better had my barbeque been more tangy and spicy. I had a sweet barbeque on hand, and the flavors didn't mix well. Otherwise, I followed directions and made the cheese sauce, and it turned out just fine. I did put it in the oven for about 10 minutes with some extra cheese on top to give it a little more of a cheese taste, but I think it would've been fine without it.

Baked Pork Chops II

it was good but was lacking flavor. It reminded me of a dish my mom made growing up..tomatoe sauce, green peppers, onion, garlic and chops. It needs a little something though...we added salt but I don't think I'll be making this one again. I served it over white rice and along side of steamed broccoli. Theres just to many scrumptious pork chop recipes out there these days! Personally...it was a nice change instead of regular ole mushroom chops, but my husband was not a big fan.

Apricot Nectar Cake I

I was looking for a recipe to use some dried apricots that I had. I boiled them and then pureed them with the boiling liquid and that is what I used in place of the "nectar". I also added 1/4 cup of water to the mix. Easy recipe. Took to work. Everyone like the cake.
