The Pine Tree State borders Canada on three sides. It also shares a border with New Hampshire and has a long, rocky coastline along the Atlantic Ocean, making Maine the only state in the contiguous forty-eight that shares a border with just one other state. Maine also sets itself apart by being the only state in the Union whose name can be spoken in one syllable. Maine is synonymous with lobster. But because early colonists considered them barely edible, commercial lobster fishing did not get started in Maine until the mid-1800s. It was cod that first enticed Europeans into crossing the Atlantic to fish off the banks of coastal Maine, even before the pilgrims reached the North American continent in 1620. Maine is not all seafood. Other specialties include wonderful blueberries and fiddlehead ferns. The countryside is 90-percent forested with lots of wild game, including moose, deer, and bear, making it a prime place for hunters. Like Louisiana, Maine has a sizeable Acadian community. Driven from eastern Canada by the British in 1755, many Acadians settled in northern Maine, where their French-Canadian culture endures.

About me:
I learned to cook out of self defense. I was brought up on pan fried pork chops and baked spam (you know the one with the "special" sauce you could make out of vinegar, brown sugar and mustard). My mom would bake it for at least an hour to make sure it was "done". The same thing went with canned ham. She did make great macaroni and cheese from scratch. I wanted to learn how everything was made, if it could be made from a box then I should be able to make it from scratch. I love to bake and tried doing it professionally in my own bakery but I found that I couldn't enjoy it as much when I was doing it on that scale, ordering the ingredients, processing invoices, balancing the register, accounts receivable and payable. Nah, I guess I'm just selfish and keep my talents for family and friends. Now I bake for fun and for the kid’s school and just smile and nod when someone tells me I should open a bakery.

Canned Apple Pie Filling

I made two batches of this today -- 14 quarts. Wide mouth jars made it much easier. I used 8 1/2 cups of water like many suggested and found that I had about 1 to 1.5 cups of leftover syrup which was a relief!!! PACK THE APPLES TIGHTLY into the jars, otherwise you end up with half a jar of floating apples and half a jar of syrup. Cram em' in! I left out the nutmeg as I'm not a big fan of it in my apple pie. Also left out the food coloring. Really fun recipe to make, and you really feel like you've accomplished something when you're done! I gave it 5 stars for the simplicity of the recipe and steps. Will make a pie this winter and evaluate taste then!

Apple Pie by Grandma Ople

This was my first ever attempt at making a pie and it turned out wonderful! It was easy to make and delicious. I did add a little cinnamon and nutmeg to suit my tastes.

Slow Cooker Sweet and Sour Kielbasa

I added strips of green and red bell Peppers and some sliced Jalapeño peppers with some chunk caned pineapple served over some simple rice mixed with peas and carrots.
