Paul's Pumpkin Bars

Eventhough this recipe is more like a cake, it is a fentastacily delicious recipe. Because almost no one in Japan has an oven, I made these in my tiny toaster oven in muffin tins. They became Paul's Pumpkin Cupcakes and they were AMAZING!!!

Chuck's Favorite Mac and Cheese

Decadent! My kids didn't all love it -- but the adults did! One even said he wants it for his bday dinner. Served it with Ahi Tuna steaks and steamed broccoli, simple and light to balance this rich side dish. I did add a bit of finely chopped onion, cayenne pepper, and mustard, just to sharpen the flavors a bit. I used whole grain crackers for the crumbs, which worked wonderfully.

Slow Cooker Chicken Taco Soup

Yum! I didn't have the corn and I subbed beer for chicken broth (per other reviews). The soup was great! We added crushed tortilla chips and shredded cheddar cheese. I'll definitely be making this again. And having the leftovers for lunch tomorrow! :)

Cocktail Meatballs

I used store bought meatballs and double the sauce ingredients, using 2 jard of chili sauce. I heated everything up in the crockpot. I made these for an 11 yr old's Bday, and the kids did not care for them (should have went with sweet n sour). I thought they were ok, the sauce was a little tangy, but mellowed out by the next day.

Pork Tenderloin with Dijon Marsala Sauce

VERY easy and good. I used fat free half and half...my sauce curdled immediately and I had to use a bit of cornstarch and water to thicken. Use dry marsala and mushrooms...any kind. I used a can of straw mushrooms I had. I will double the sauce next time. I could just eat the sauce poured over jasmine rice and be happy!

Fruit Dip II

I made this for an 11 yr olds Bday party, and would you know that the girls did not care for it! I liked it but found it really sweet. Mine came out really fluffy. The next day I stirred it up and it came out smooth and nice. I made it as suggested by DWILSON0116: Use light Strawberry Cream Cheese. add 2 TBS of orange juice when mixing with the marshmallow ceam. Finally, fold in 1 cup of Cool Whip.

Rolled Buttercream Fondant

I read all of the reviews and noticed a stark difference: reviewers either LOVED it and it was "easy" or they loathed it and it didn't work. Of course, I was sure I would be one of those for whom it worked easily. Not so much. I can't fault the recipe because I'm more apt to believe it was a user error on my part (but perhaps the recipe could be a little more explicit?). I received some help/moral support (TY PAM) on the RE and finally "made it work", in the words of Tim Gunn, but it wasn't pretty. I *think* I'll try this again because I hate to let anything get the best of me.

Grocery Store Frosting

I am one of those people who *calls* the corner piece of cake w/all the balloons/flowers (which means LOTS of frosting), so when I saw this recipe I knew I wanted to try it. I finally made it this evening and it really is just like grocery store buttercream frosting. I followed the recipe, though I didn't measure the 10X sugar. I also added a little milk to the color I was using to frost the entire cake to make it a little more smooth (no milk necessary for the piping colors). TY for a great recipe!

Sweet, Sticky and Spicy Chicken

A-MA-ZING...simply amazing! I followed the advice of other reviewers and dredged the chicken in flour first. Then I sauteed an onion and some peppers and set aside. Next was to quickly sear/brown bite-sized pieces of chicken (you want that crunchy coating) and added the sauce and cooked veggies to simmer. For the hot sauce you MUST use Sriracha Hot Chili Sauce (Rooster Sauce). It MAKES the dish. My chicken was sticky, sweet and spicy just the way it was supposed to be. What an amazing flavor profile. I'm thrilled with this recipe!
